Bacchus's strong point does not lie within his attack power (though it is still considerable), but his evasive, unpredictable movements. You can have an almighty sword, but if you can't hit, then it's meaningless. The reason why Erza and Bacchus could end up in an impasse, is because one is a dodging-counter specialist and the other defense-attack specialist. You are not only unable to hit, but you are even countered instead and you can't counter yourself, then the only options left are to dodge, or defend, or what Elfman did. In the end it's all about endurance and will power... still, he might have fallen to less direct attacks, or an area spell.
I don't think that Zaref's will is in accordance to their plans, especially since his "awakening" wasn't what he wanted or even needed. Zeref's magic itself, is similar to Tenrou Island's(TI) magic protection, it turns emotions and feelings in to magic/power. Not to mention that his retirement was taking place at TI.
