Elfin lied had some really good music, i loved the gregorian chant used throught and in the titles

Yeah, so did I. In fact, that's the whole reason why I bought and watched the series... which turned out to be pretty disappointing.

Great music though.

Personally, I loved "Shura" by DOES on Gintama, as well as a few other songs like "Mr. Raindrop" and "Pray" by TommyHeavenly6. They also played a certain song during sadish scenes I later found out was called "Jinsei wa conveyer belt..."
Kyou Kara Maou has also had basically all of their music (well, in the first season) loved by me.
I also liked the music for Escaflowne, especially Sora. It's just so pretty! *hums along*

Some of my favorites are

Cowboy Bebop - Smooth rhythmic Jazz and Blues, fit the series perfectly.
Samurai Champloo - Grade A+ funky Hip-Hop by one of the best producers out there now. Also fit the series wonderfully.
Denno Coil - The music for this series is very original. I can't really explain it well, it's just different. Can't wait for an OST to drop.
