Yup, you're right. Remember Lee VS Sasuke... If Sasuke/Kakashi wanted to copy a move that is too strong/fast for them, they would not see/understand it, or not be able to do it.

Although Sasuke managed to copy Lee's Renge later on, while when it was used on him he didn't even notice what happened. Never understood that. Kakashi later comments this being one of the ultimate powers of the sharingan.

what if their eyes were stolen? what if a child of the clan with the abilities were raped and the child twisted to serve another clan? What if the DNA was taken and they learned to add the ability to their own ninjas? Better to protect it totally than run the risk.
